Our story

Jerky, the way a chef would make it

Strip started because I loved beef jerky but never loved what the category looked or tasted like. Everything felt overly aggressive, overly processed and way too sweet, while still being marketed as healthy.

The idea came together in culinary school. We use inside round beef, keep the ingredient list tight, and lightly sweeten with honey so the flavor stays balanced.
